turbo / flash-baked / non-fried fries?

I'm opening a hot dog stand in Madison Wi (my second-sold the first 8 years ago) and it doesn't have a fryer, or more importantly, any hood vent. It does come with 2 "ventless fryers" that I'm doubtful of.....any thoughts?

If you're talking about greaseless friers some of the best fries I've ever had came out of them.

What brand of dog will you be serving? Usinger's are excellent; especially their natural casing angus beef dog. Though good fried, I prefer this dog grilled or heated in water. Good luck.

Ken (kensandiego) uses fry-less fries and they are really very good. Maybe look him up here on the boards.

My last stand proudly served Red Hot Chicago's 8 to 1 and Best Kosher's 5 to 1. That way I was offering a Kosher dog and a jumbo dog. Both the Redhot and the Best's were available in all (16-20) menu forms

there is no best kosher anymore, sara lee shut down best and sanai division 2 weeks ago
