turkey cutlets or tenderloins

I was at Publix yesterday and saw that Jennie O had Turkey breast tenderloins or cutlets on sale so I bought a pack. Have any of you seen this and what do you do with it? I suppose anything that you do with boneless chicken cutlets, however these are a bit thicker. Your thoughts or recipes would be welcome.

I use the tenderloins for Turkey piccata. Just pound it nice and thin.

Pound the cutlets and use for "chicken" parmigiana. I also have used in marsala recipes.

Tmizerk's got a good idea....I've seen several recipes like that...Turkey Tettrizini is another one.... How about turkey squares! Hey, don't laugh. I use to love this dish in high school. They use a moist, well seasoned stuffing and add big chunks of white meat turkey. They bake it and serve it with a good cranberry sauce on the side. Make up some mashed potaotes and a gravy. Great kids dish. I'd use a Pepperidge Farms herbed dressing or better yet, my own stale cubed bread. Add in, sauteed in butter, onions and celery. I'd put in a few whole beaten eggs for moisture and some heavy cream, too. You could also put in some dried fruits like cranberries and apricots and perhaps some pecans , too. I'd also add fresh parsley and a small amount of sage, thyme, parsley and rosemary to the already seasoned stuffing mix. etc. Cut up the raw tenderloins and bake it all in a buttered casserole dish until the turkey is just cooked through.

tmizerek I use the tenderloins for Turkey piccata. Just pound it nice and thin. Here you go. Feeds 4. Ingredients Directions -
1 Pound turkey thin. -
2 Dip turkey into egg/milk mixture, then crumbs to coat. -
3 Over mid-high heat melt 4 tbl butter and 1 tbl margarine. -
4 Cook turkey until browned on both sides. -
5 Add more butter/margarine as needed. -
6 Remove to plate. -
7 Reduce heat to low. Squeeze juice of half lemon into skillet, Stir in broth, salt and capers until blended, scraping loose brown bits from bottom of skillet. -
8 Return turkey to skillet: cover and simmer 5-10 minutes or until turkey if fork tender. -
9 Serve with slices of remaining lemon and parsley sprigs.

great ideas guys...thanks now I don't which one to pick. Ben yours sounds really good just roast it off. I don't know about you but I love turkey even more than I love chicken.
