Who knows what evil lurks in the hearts of Butchers? Glue, Tenderizers, Hamburger Helper-----so what's a little glue----eat it it's good for ya !!!! There are kids in Haiti starving, they would be glad to have it--glue and all.

Doing some research, it isn't the meat glue itself that is dangerous. It's that the meat glue is used to bind surfaces of cuts of meat. And the surfaces are the parts where bacteria grow. So if you have a cut that has been created by gluing several pieces together, and you grill it to medium rare, the bacteria in the center are still alive. However, properly used, meat glue can be an exciting and innovative part of food chemistry. It is a tool, and it needs to be used properly. But there is nothing wrong with it inherently.

Perhaps they just need to wash the cuts of meat with anti-bacterial soap before gluing them together.

Better yet, glue a strip of bacon around a filet, so you don't have to waste a toothpick!

Well, the one clip that I saw was of a queensland butcher demonstrating the process used to make the faux fillet. When it came time to use the glue the two gentlemen were wearing resperator masks and when asked why are we wearing masks the butcher said "the stuff's dangerous. I see where the EU has banned it.

While I don't love the recent rush of scientific gastronomy, I understand it and in the right hands can be quite good. This stuff however scares the crap out of me!

Equally horrified over this, I emailed one of our supermarket chains about transglutaminase and received this response: Our fresh meats are whole muscle cuts and do NOT contain any meat glue or "Composite Meat Product." This is not widely used in the industry and any products that have this must be labeled. It is used to make uniform portions that cook evenly and look good. It's also used to bind meat mixtures like sausages without casings or make novel meat combinations like lamb and scallops. Product that contains this ingredient must be labeled. Check the ingredients of the products you may question for "Composite Meat Product." Of course, if used in restaurants, there would be no label to examine. So, when shopping, I guess we need to look for "Transglutaminase" and/or "Composite Meat Product".

I spoke to my Butcher today, and asked him about this. He was rather suprised to hear of it. I guess stunned is more like it. Granted, I can see him cutting Meat behind the Glass.. and he does know what his customer's want, Today he saw me and cut 2 T-Bones that would make your grill turn on! Glad I have a great Butcher.. and happy to pay for what I get.. Not Composite Meat... Scary too me.. I like mine Rare!!
