vegetarian food from boston to austin?

My husband and I will be moving from Boston to Austin later this fall. We will probably be taking the the usual route through the Appalachians -- Mass Pike to 84 to 81, joining 40 before Knoxville, 30 at Little Rock, and then through Dallas down 35 -- or possibly a detour to avoid the Dallas traffic, going straight south out of Little Rock to hit 20 in Louisiana and then taking Rte 31 in TX through Tyler, Corsicana and Waco. He's a vegetarian; i'm not, but I'm headed that direction. Can anyone suggest good places along that route (or near it)? They don't have to be purely vegetarian restaurants, obviously, but places with non-meat options besides Taco Bell /*grimace*/ would be great. Good fish places are also a possibility. Thanks!

Is this the brain drain we've always heard about? Or is there an underground railroad spiriting Bostonians away to add to Texas electoral and House of Representative totals? Is Austin the only place in Texas northeasterners feel safe? By my count this is the 3rd family waltzing down to Tejas...with none headed the other way! This website might be able to help you. Just click on the state in the left-hand column.
