my local HD says i do not have to have a vent since i have no people inside like a B/M place would, but if you think about it for a minute, even if you dont "need" one, you will probably still be glad you have one once the heat starts flowing

Most HD codes (older ones anyway) required exhaust hoods over 'gas' cooking equipment to vent combustion gases. Electrical cooking equipment didn't require exhaust hoods. Now, many new Codes require exhaust hoods over all smoke & heat producing equipment. ... So even if your Code doesn't require a hood, the added benefit is the ability to vent smoke & heat and maybe keep the area a little cooler.

My HD doesn't require a hood or ansul but I am thinking of installing one just to be safe....provided I can find one in my build budget.

Even if your HD doesn't require one, it's going to be toasty inside without one. If you don't want to go to the expense of a concession trailer hood, check appliancesconnection .com - I picked up a 48" Broan hood with an internal 600 CFM fan with the option of horizontal venting for $650 and it works great. If you need more power, it's only about $150 more for 1200 CFM.

I have an 8' hood, don't know the hp or cfm, but in my opinion it's over sized.... I did a 3 day event this weekend, parked in the shade, temp was in mid 80's...every time I checked the inside temp, it was hovering around 109......On days that were over 100 last year, I hit 114+ inside. Why would anyone build a kitchen without a powerful exhaust hood? I know a lot of you are not running a char broiler and producing as much smoke as I am in these pics, but even the heat factor, If I turn the fan off for just a minute to talk to someone at the window, the temp rises very quickly, and do you want to be breathing the off gases from your equipment?

I had 2 13,000 btu a/c units written into my plans I don't plan to have a charboiler or grill .....however I thought if I am running the a/c with and exhaust fan out the window goes my air. Chef B do you have a/c units?
