we are open! YEAH.

it was a tough road, but a quick one. we gained access to the space on the first of April and just took 8 days to revamp the whole place. crystal is sooo wonderful she is the ambiance master! i am enclosing a link to my photo bucket page which will host the pics. unfortunately, not all of the pics came out well. i am not sure if it was the lighting, as it was midnight, or if it was the 18 hour day we put in, or both, but i will try to get better photos when i can. it seems that the folks that ran the gyro shop before us gained a really bad reputation, and we are having to work through that and regain some LOVE. so, i fired up the newly acquired smoker, and let them all get a good sniff of whats to come. that brought tons of interested people. it was no surprise that the bbq sandwich( served southern style, with the sauce, on the side) was the biggest hit on the menu. there are many place up here that advertise bbq, but they boil meat, and sauce it to death. we sold out of bbq. (time for a bigger smoker..lol)
the space we lease is only 300 square feet(elves feet). although its real easy to clean, its real tough to crank out food. but we are learning the do's and the dont's real fast. lol! ANYWAY, there are tons of other things we are finding out, and are resolving best we can. but we have faith and are positive about our new venture. none the less, prayers from all of you would sure be helpful..

Having opened (and then closed, two years later) a taqueria up here, I (we) know how tough it can be, even after 24 years in the biz.

So, you have my (our) prayers, some lit candles, crossed fingers & toes, and I've built a small shrine built to St. Lawrence, the patron saint of barbecue and rotisserie.

Lastly, small is good! Easier to clean, but I hope you have room out back for the smoker.
