what is the best? I'm working on a hot dog stand in Atlanta...looking for advice.

This is my first post here...after following conversations about hot dogs as a visitor I am looking for a little bit of feedback from some industry experts.
 
I am working on opening a free standing hot dog restaurant in the Atlanta area.  I am not ready to disclose my exact location yet.
 
My goal is to focus on a great quality hot dog similar to Papya King in NYC, but create a little bit spicier blend in all beef hot natural casing hot dog.  I will be making my own product and formulating my own spice blend. 
 
The plan is to sell 2 sized of dogs 1) a natural casing 6/1 all beef kosher style in the $1.50 range and 2) 4/1 polish vienna beef style beef/pork blend with natural casing in the $3.00 range.
 
I plan to griddle cook both products and use a fresh steamed poppy seed bun.
 
What are best 3 hot dog restaurants to emulate as far as style and product??  What topping would you expect to find in an Atlanta hot dog joint??  (obviously cole slaw and chili) but looking for what you guys have to say.
 
I hope to have products to sample in about 60 days and will be glad to start sharing!

    Go to places in your area and search online. check out www.HotDogShops.com and look at different shops menus.

    i understand kosher, but what is "kosher style"?
    who is going to manufacture the kosher dog?


    Don't cook the kosher and the pork blend on the same griddle and don't cross contaminate the two.

    Let me clarify.  The stand will not be kosher.  The Kosher style dog refers to a Coney style (or new york style) hot dog that is 100% beef with collagen casing. Think Papaya King dog, Sabrett's or Nathan's.
     
    The larger 4/1 dog will be Vienna Style, because I want to use natural casing, I will end up using a pork casing, so there no use calling it a 100% beef dog (like Vienna used to) when the casing is Pork.

    Papaya King, which uses Sabrett dogs, and Nathan's have a sheep, not collagen casing.

    Put it in the restaurant professionals forum. This section is for consumers, not vendors. Sorry to be blunt, but the pros don't want us there, so they shouldn't be here asking pro questions.
