what is the best? I'm working on a hot dog stand in Atlanta...looking for advice.
This is my first post here...after following conversations about hot dogs as a visitor I am looking for a little bit of feedback from some industry experts.
I am working on opening a free standing hot dog restaurant in the Atlanta area. I am not ready to disclose my exact location yet.
My goal is to focus on a great quality hot dog similar to Papya King in NYC, but create a little bit spicier blend in all beef hot natural casing hot dog. I will be making my own product and formulating my own spice blend.
The plan is to sell 2 sized of dogs 1) a natural casing 6/1 all beef kosher style in the $1.50 range and 2) 4/1 polish vienna beef style beef/pork blend with natural casing in the $3.00 range.
I plan to griddle cook both products and use a fresh steamed poppy seed bun.
What are best 3 hot dog restaurants to emulate as far as style and product?? What topping would you expect to find in an Atlanta hot dog joint?? (obviously cole slaw and chili) but looking for what you guys have to say.
I hope to have products to sample in about 60 days and will be glad to start sharing!
