The first order of business is to meet with your local health inspector to determine if they'll license the equipment you desire to purchase. I believe the state of Florida doesn't allow the grilling of raw food from a cart. They don't here in Wisconsin. You might want to connect with some of our Roadfood Florida street vendors.
