yearning for a good crawfish boil

Unfortunately the crawfish aren't running well yet. I know it's early, but as the willows and sweetgum begin to bud (yes, winter is almost over in south LA) I begin to crave a good crawfish boil!!! My wife and I bought 10lbs boiled last week. Expensive (almost $6.00/lb!), but it did take the edge off of my craving. Bought them from Dwight's in Lafayette. Well boiled, but kind of on the small side. Since this is the recipe section, here's the "dip" my wife and children like. Myself, I like them plain and yes, I do suck the heads. 1 cup mayo 1 cup ketchup 1-2 tbs mustard (creole) horseradish (1-2 tsp) cayenne (as much as you can stand!) pinch of black pepper Louisiana hot sauce (not usually tabasco) 1 tsp wine vinegar onion tops (a handful or so) mix well & dip! Here's hoping the crawfish start running soon! cy

You would have to rub it in that it's almost Crawfish time. I had some last weekend and they were on the small side as well. I miss spring in LA, there is nothing in this world that can compare to it. We tried to get my Yankee cousin to suck de head, but she would have NOTHING to do with it. Have a great spring and pinch and suck a few for me
