Out front is a center slice of Stan's country ham, which is far less salty than most and possesses more than a hint of smoke from the curing process. Turnip greens, fried okra, and a true Tennessee delicacy, white beans, round out the plate; folks like to chop the green onions into the beans and/or put the ketchup in the cup on them. The other cup contains "red-eye" gravy, a requisite sauce for the tender ham."
