This is how I imagine pizza should be.  Darkly browned and crispy on the edges.  Chewy in the middle with just the right amount of sauce, cheese, and spices.

The peppery arugula and salty proscuitto work well with the crispy/chewy crust.  That crust reminds me of the wonderful crust at Frank Pepe's in New Haven, CT.

Tender, sauteed eggplant filled with ricotta and swimming in basil-scented tomato sauce is just divine.

The bottom of this tells me it was made in a well seasoned sheet pan.  Lots of texture to this dough, like focaccia, and well seasoned.
