Minorcan clam chowder, superheated with locally-grown datil peppers, is unique to St. Augustine, Florida.

Pilau, a favorite comfort food of the Lowcountry, was the lunch special when I stopped by Schooner's. It is very mild but easy to pep up with an application of the house-made datil pepper hot sauce. In the background are candied yams, buttered toast, and stewed okra.

Like a few other restaurants in St. Augustine, Schooner's serves excellent fried shrimp that comes with pink dipping sauce. The greens were greatly enhanced by the datil pepper vinegar.
