The creative Durango omelet included organic ham, scallions, jack cheese, guacamole, sour cream, sautéed mushrooms and a green chile or a tomatillo salsa.  Or in this case, both sauces!  Highly recommended!

Huevos motulenos puts over easy eggs and black beans on a corn tortilla and then tops them with banana, feta, green peas, roasted tomato-jalapeno salsa, plus the chile of your choice.  Spectacular!
