Lamb fries, a.k.a. tendergroin, are a plush appetizer. Sitting at a table in the Cattlemen's Cafe one day plowing into a pile of them, I once commented to a cowboy friend that they reminded me of fried clams. He practically gagged. The idea of eating fried clams was, to him, repulsive.
