Dyer's is a polite barbecue. Décor is Texas-rustic. Sausage is just fine: a taut, full-flavored section that needs no sauce whatsoever. Ribs are delightful, their surface sticky with cooked-on sauce, the meat moist and succulent, pulling easily in long strips from the bone.

This is Dyer's smaller combo plate, with one portion of three meats. The larger combo has two portions of each. I chose ribs, brisket and Polish sausage. The onion rings are especially luscious. In the background is a basket of Texas toast and a bowl of beans. Also on the plate is a cup of strange, sweet apricot sauce.
