The specialty of the house, of course, is pancakes. They come in different sizes and flavors, from basic buttermilk (which are thick, steamy, and light-textured) to wafer thin crepes that are used as “French pancakes” topped with jelly, Cointreau, cherry, or apricot. The super-thin ones are also used for “Swedish pancakes,” which are accompanied by a cup of lingonberry sauce.

We're not sure why these buttermilk pancakes topped with apricot sauce are called Bohemian, but they sure are delicious.  That's a cup of thick sour cream in the background.

There is nothing better than an excellent baked pancake. It is substantial, but dramatically leavened by the inclusion of many eggs that puff it up and create a texture like some fine, sweet Yorkshire pudding. Millie's version, sad to say, was earthbound.

Swedish pancakes are served with lingonberry sauce. It's a great idea, but not so well executed. For this dish to work, the pancakes have to be featherlight, not elasticized.

The thin, crepe-like rolled pancakes did not live up to our good memory of them. Rather than being delicate and refined, they were a little bit tough. Not hideous, but not worth a trip.
