Biryani is available with chicken, but this is the vegetarian version of the roasted spiced rice dish. Wow, what a kaleidoscope of flavors, including occasional fireworks that are more perfumy than peppery.

Does it taste like chicken? Actually, not like too many chickens I've had. For this dish, known as seekh kabob, the chicken is ground and mixed with a hailstorm of spices. It is then skewered and cooked in a clay oven. The result: a kind of sausage that is moist, chewy, and especially fine when accompanied by patches of naan flatbread.

Two samosas, at $3.99, are listed as an appetizer. But these crisp-fried triangles are big enough, and loaded enough with moist, oniony potato filling, to be a very nice little meal.

At lunchtime on a Saturday, nearly every customer was standing around for a take-out order. The fried chicken and fish come out pretty fast, but the Royal Specials take a while.
