One of the best examples of the local way with seafood, catfish and oysters in particular, is at the simple Metairie family tavern called Bozo's, a few blocks from Lake Pontchartrain's shores. Begin your meal with chicken and andouille gumbo, light in body but big on flavor. We most of all recommend the fried catfish.

What's so great about French bread in these parts is how light and fluffy it is. This toasted and buttered loaf precedes a Bozo's meal and is extremely easy to devour with only minor damage to appetite.
