The differences between toast made from blah store-bought bread and toast made from Doris's sturdy homemade loaves are dramatic. These thick, buttered tiles are deeply satisfying in and of themselves.

Here in potato country, it is rare to find bad spuds. Doris's home fries are full-flavored and run the texture gamut from melting soft to crunchy. Here they are shown peeping out from the inside of a special cafe omelet.

Doris's good ployes might seem a bit redundant considering the goodness of the cafe's toast and potatoes, but ordering them easily can be justified if you remember that they are made from buckwheat, and buckwheat is botanically closer to rhubarb than to wheat. Nothing sops up butter quite so well.
