About a year ago three friends bought Dairy Treet, the oldest hamburger stand in Orange. They renamed it Bruxie* and started writing their own history selling gourmet waffle sandwiches. A lot of people lamented the passing of Dairy Treet, which had been flipping burgers for over 60 years. If the long lines are any indication, the mourning period didn’t last long! As of this writing there are over 1400 reviews on Yelp giving Bruxie an overall rating of four stars. Any restaurant would give up their secret recipe to have that kind of following.

We arrived on a sunny California morning before the lunch rush, put in our order, and found a seat right away. Following a fellow diner’s advice my wife tried the buttermilk fried chicken and waffle while I went with the green eggs and ham sandwich. We added an order of waffle-cut fries (what else would you expect?) and a couple of sodas to wash everything down.

The waffle itself is light, thin, and airy, with a nice crunch. The recipe was originally developed by one of the owners ten years ago and has been tweaked to make the perfect wrapper for their unique fillings. My wife’s sandwich was a batter-fried chicken breast set on a bed of cider coleslaw with a chili honey sauce on top, enveloped in a Bruxie waffle. This sandwich is a kicked up version of a classic Southern dish.

My green eggs and ham sandwich started with their signature waffle. Layered inside was some thinly sliced grilled Black Forest ham. On top of that was a layer of freshly prepared neon green arugula pesto, and then some lightly scrambled eggs. Melted into the top waffle was a slice of Tillamook cheddar cheese. I would recommend this rich creation to anybody.

Savory waffles aren’t the only things on the menu. Bruxie also serves up a half-dozen sweet varieties. We were too full to sample any but you can bet I will save room for dessert the next time. I think I will try the crème brulee sandwich filled, according to their menu, with classic vanilla crème, burnt sugar, and seasonal fresh fruit.

Good food tastes better when served by friendly people. Our hostess Tagen made us feel right at home by checking up on us and stopping to chat for a few minutes even though the place was getting busy. If the food isn’t enough to bring you back here the staff’s helpfulness should seal the deal.

Bruxie has a nice variety of interesting shakes.  This one, loaded with lots of whipped cream, is mint chocolate chip.
