Ms. Myra was referring to the pig ear sandwich, a regular item on the menu, and a selection, of course, we could not resist. Yep, it's two whole ears in a bun. We got ours with the works: lettuce, tomato, onion and ultra-hot horseradish.

"When I asked my waitress at Niecie's about the menu item listed as "Ham, Fried your Way," she started to list the different ham options. I stopped her when she got to country ham and was rewarded with this wonderful slice of salty, chewy and powerfully flavored meat."
