Any wiz at word association knows that Roswell is synonymous with aliens, and for most of the second half of the 20th century, the town remained a unique travel destination for extraterrestrial enthusiasts. As a small town located nearly 200 miles from the sprawl of Las Cruces, Roswell preserved its independent, small-town feel for quite some time. However, over the past decade, the landscape has changed dramatically as the “big box” stores and national restaurant chains have taken up residence along Roswell’s main drag. To the casual tourist in search of a UFO sighting (or at least an alien T-shirt), it may seem that the Roadfood pickins’ are slim; however, one solid option is just a short detour from the alien internet cafes downtown.

If there is ever a sure sign of good food, it is a parking lot filled with local license plates. We found such an omen at La Posta one early weekday morning and walked in to find several conversations taking place across the small dining room. This is a no-frills establishment with a few seats at the counter as well as a smattering of two- and four-top tables. Hungry for traditional New Mexican cuisine, we ordered the South of the Border egg scramble as well as a breakfast burrito. The egg scramble consisted of corn tortilla strips that were minced and mixed with egg, chorizo, tomatoes, jalapeños, and onions. Topped with a green sauce, the scramble was unbelievably flavorful, and the combination of chorizo and thick jalapeño slices necessitated long sips of the on-tap horchata between bites. Alongside the eggs were refried beans, hash browns, and two homemade tortillas, making for a veritable breakfast feast.

With the breakfast burrito, you are asked to choose from among a list of available fillings including sausage, bacon, ham, chorizo, onions, and jalapeños. We chose potatoes, long green chile, and tomatoes to accompany our eggs and cheese, and found the combination to be perfect. The potatoes and tomatoes nicely complemented the spiciness of the green chile, and the green sauce contributed the perfect degree of moisture without causing the burrito to become soggy.

Workmen, couples, and small families created a delightfully melodious din of clinking cutlery upon plates, coffee sipping, and lively discussions about the day’s weather forecast, town happenings, and the whereabouts of certain loyal customers. La Posta is located just off of Route 380-70 on the quiet side of Roswell and is a welcome eatery for Roadfooders keen on New-Mex cuisine.
