Blau’s Saukville Meats is a carnivore’s delight. It is a full-service butcher shop where you can buy ready-to-grill Wisconsin style brats (bratwurst), freshly made from beef, pork, pork and mustard, buffalo and – perhaps the most delicious of them all – chicken, which drips with juices when severed by a knife. The meat cases are also stocked with firm-fleshed summer sausage, smoked meats, and a wide variety of hand-cut beefsteaks, plus hamburger and stewing meat of all kind.

On the non-refrigerated shelves are large supplies of made-on-premises barbecue sauce, Amish jellies and preserves, plus an amazing assortment of various animal parts not for human consumption, but suited for dog toys and snacks, such as pigs’ ears and leg bones.

If you are passing through Saukville with a freshly-killed deer strapped to the hood of your car, this is a great place to know about, for the Blau family’s specialty is butchering whole game animals. The last time we looked, the cost to cut, wrap, grind, and freeze any normal-size creature was $55. For an extra fee, you can have the hide taxidermized.
