OST, short for Old Spanish Trail is the place to eat in the town that calls itself the Cowboy Capital of the World. You can dine in the John Wayne room or at a counter with saddles in lieu of ordinary stools. The house spur collection includes rowels dating back to frontier days; and the buffet is set out under a downsized covered wagon.

While the Tex-Mex dishes we've had are fine, the must-eat meal at OST is chicken-fried steak. It is a beautifully rendered version of the unofficial state dish of Texas, a balance of crunchy crust and tender meat with creamy gravy that adds pepper snap.
