The setting of the Simon Pearce dining room, perched above a rushing waterfall with a picture-window-view of Quechee's covered bridge, is the New England landscape at its most dramatic. And the cooking, which reflects Mr. Pearce's Irish heritage, is good and hearty: shepherd's pie, Vermont cheese soup, smoked salmon, and good beers.
