Elegant boudin with inelegant utensils: a classic Cajun-country sight. Earl's boudin is some of the region's very best, with a natural casing that crunches and insides that fairly burst with spiced pork and rice.

Boudin is one of the nation's great bargain meals, requiring little more than a beverage to be complete.

Plate lunches at Earl's are all under $5. This is mighty good fried chicken, but not good enough to dissuade us from a meal of boudin sausage.

Red beans are a staple throughout southern Louisiana. These came as a companion to a fried chicken plate lunch. Note the surfeit of pig meat that flavors them.

Like so many of the excellent butcher shops in Cajun country, Earl's is part of a regular grocery store. What fun it is to browse these aisles, which are stocked not only with familiar products, but with all sorts of local spices, sauces, and interesting canned goods.

Nothing about the exterior of Earl's hints at the superior boudin sausage made inside.
