One thing I'd do differently than the recipe, if you are so inclined, is to use a vessel that can be sealed and use an airlock. If you get bad yeast in their from the air, it's a crap shoot. It may be a good variety that actually adds good flavor, or it may give it an off taste to downright putrid!
