Mrs. Roadhouse and I bought a hunk of that very cheese as part of a Christmas gift package for our son-in-law. We picked it up at The Better Cheddar in Kansas City, MO along with a wedge of Maytag Blue and another blue cheese (the boy likes blue cheese, what can I tell you?). It's actually quite tasty with a slight sweetness and a firm, but creamy texture.

Had I known its volatility and proclivity for catching fire, I might have sent it back to Chicago via UPS instead of the trunk of our car.
