The Finnish style pancake, Panukakku or something like that. It's eggy and it's BAKED. Last recipe that i remember seeing B.T.W. came on the inside of a carton of eggs.
going back to their founding, two certain chains of pancake used to offer a wide variety of pancakes from around the world which were more than traditional pancakes with something added to the batter - chocolate, blueberries, strawberries, etc. regretfully, first the older chain and then the new upstart decided to shuck their pancake heritage for a wider variety of options and with that, the delightful choices were gone. examples of pancake concepts from both no longer offered:
crepes suzette (VERY sweet)
Swedish baked pancakes with ligonberries
German (what one of those certain chains call "Dutch" is only a smaller version of their now gone German)
b.t.w., Angela's Cafe in Jefferson City (Mo) offers Blackberry pancakes. good, but what i talked about above - regular pancake batter with something added. they also do chocolate, strawberry and blueberry depending on what's in season and what they feel like.
update Septebmer 27th - last weekend Angela's had a cranberry and white chocolate pancake. once again, the batter stays the same, these are just items added to it. there is a place that makes chocolate pancakes where the batter is actually chocolate but it is part of a chain so i won't say too much more, just wanted to point out that they go beyond adding stuff to the batter. oh yeah, Angela's still has the blackberry pancakes. and b.t.w. they sell Nehi soda, also, usually carrying just one flavor.
