I'm looking for a Chili recipe for chili fries,It would be nice if the recipe was in large qty.I.e serves 50+,No beans,low cost to make is a big plus.

      You can see fry the chillies first and add the spices in them, this is the also new recipe.

          I love chili fries but have always had no luck making them at home because my chili is not thick enough.  What can I do to make it thicker?

            See if Wolf Brand Hot Dog Sauce is available in large cans.  It's cheap and good on fries.

                OK, the way to both thicken chili AND improve the flavor is by using limed corn flour (masa harina). What they make tortillas out of. Now, you COULD go with what Alton Brown suggests, and crumble tortilla chips into the chili, if you don't mind the extra salt. But I buy a 5 pound sack of the stuff from a market that caters to Hispanics for $2-3, and just throw out 4 pounds of it, and leave the last pound in a quart container. A teaspoon per quart.

                  Corn flour (masa) is what I use, and it provides more southwest flavor than any other thickener.  However, Wondra flour is superb, and I won't make gravies or sauces without it.  And, if caught without a supply of masa, I would use absolutely use Wondra in my chili.

                    Sorry if I implied that Wondra was not good on an absolute basis; I just have a lot of friends from Texas. I use Wondra in a number of things; just not chili.

                        Great suggestion . Wolf brand chile (without beans) would be a good alternative. It's my go to "need chili in a hurry" brand. I usually add a little ketchup to the pot while it's cooking.
