Ooey Gooey Butter Cake... Thu, 12/19/13 12:33 PM (permalink)
Anybody ever made one or tasted one? I've got a wild hair to bake one for Christmas dessert and was just curious. Recipe link is below. I'm only going to use half of the powdered sugar (like that's going to make a big difference)

    Never made one but the recipe sounds simple.  A bit over the top with the powdered sugar though????  I believe I would double up on the butter.

      It's native to St. Louis and every bakery, restaurant and grocery store has 'em.  Like anything, some are better than others.  I love them and on every trip to STL, I'd bring quite a few home!  If you've never had 'em, you'll love them.  My favorite place is http://parkavenuecoffee.com/ which lists 76 flavors currently.  I've had most in the interest of science!

        I made one a few years ago using Paula Deen's recipe.  It was so sickening sweet I couldn't eat it.  Even my mother who has a WICKED sweet tooth didn't like it.

          Ditto lleechef, 10+ years ago.  However, my friends loved it and requested it after that.

            Should have known Ms. Deen's name would have come up! I just looked at her recipe and it's exactly the same as mine except it calls for a little vanilla. Heck with it...I already bought the mix and cream cheese. Worst case scenario I'll feed it to the squirrels.

                You know I almost did an edit and was about to say that! Reviews to follow. I noticed that the recipe I'm using is also the same as that coffee shop in St. Louis.

                  Pancho - their flavor choices and combinations are incredible!  Seems like whenever I visit it is like a new experience!  I am not sure how difficult it would be to create other flavors from the original recipe if you enjoy them!  Good luck on the production!

                            There's no such thing as overkill in the food arena! 

                            In Deen's case, the cake wasn't overkill, it was inedible.  More is not better.

                                We've both made it and bought it at a local restaurant (altho they don't call it GBC). I like it, even though it's really kinda rich. One of my favourite desert cakes.

                                  The Travelin Man met up with a Contingent tour a few years back as he was passing through Chicago.  He was kind enough to bring us about a dozen different flavors of Gooey Butter Cake he had procured in St. Louis.  We stood outside after a massive seafood spread at Glenn's Diner and chowed down to the last crumb.
                                   
                                  They were damned sweet and incredibly rich, but no one complained, I can assure you.

                                        If it had Cream Cheese in it, it is not authentic Gooey Butter Coffee Cake. My Mom grew up in Saint Louis in the 40's and 50's when it was a new experience. Sometime in the 60's, before we moved away my Mom got the recipe from Sutton's Bakery - they claimed to have invented it. While it is indeed sweet, it is not as sweet as many of the recipes involving cake mixes and cream cheese. Here is the recipe:
                                         
                                        Ingredient List
                                        2 3/4 cups Sugar
                                        1/4 cup Shortening
                                        Salt
                                        2 Eggs
                                        3 3/4 cups Flour
                                        1/2 cup Milk
                                        2 TBSP Vanilla
                                        1 package (.6oz) Compressed Yeast (Can Substitute 1 package Active Dry Yeast)
                                        1 cup Butter
                                        1/4 cup Light Corn Syrup
                                        Water
                                        2 9x9x2 Pans
                                         
                                        Crust:
                                        Cream 1/4 cup Sugar, 1/4 cup Shortening, and 1/4 tsp. Salt. Add 1 Egg and beat 1 minute or until well blended. Dissolve Yeast in 1/2 cup Warm Milk. Add 2 1/2 cups Flour, Milk+Yeast Mixture, & 1 TBSP Vanilla to the creamed Sugar. Mix until Well Blended, turn out on floured board or counter and knead for 1 minute. Place in a lightly greased bowl. set in a warm area to let rise for 1 hour.
                                         
                                        Filling:
                                        Mix 2 1/2 cups Sugar, 1 cup Butter, and a dash of salt. Add 1 egg and 1/4 cup light corn syrup. Slowly add 1 1/4 cup flour. When Batter stiffens add 1/4 cup water and a TBSP of Vanilla.
                                         
                                        Preheat Oven to 375 degrees. Divide dough and place in greased pans, crimp dough halfway up the side, Use a fork to poke holes liberally around the bottom of the pan so that it will not bubble. Place half of the filling in each pan and spread evenly. Let sit for 20 minutes, then bake for 30 minutes. Pull them out after 30 minutes, the top will still be liquid. Let cool and dust with a little powdered sugar.

                                                  I grew up on butter cake in Northeast Philadelphia, which just happens to be the hot spot for same. The German bakeries were the best, and some are still open. Just google Philadelphia butter cake and you'll see -- I didn't want to post a link on here, to be honest.

                                                    Well, the ooey gooey is history. Not really...the squirrels are getting the rest, and even they don't seem very excited. I followed the recipe and used "only" 8 oz. of powdered sugar (half the recipe). It came out kind of flat, very sweet, and got mixed reviews. I'm still glad I gave it an attempt and a taste.

                                                            Yes, it's a really big thing here in St Louis; I don't have it often, because it is just too sweet for me, but Park Avenue Coffee's versions are the best of the bunch, no doubt.
