you guys beat me to it, dot dot dot.( I am guilty of that) Except add chicken, dot dot dot

I can tell you what I do with turkey, and you can substitute chicken, and add whatever vegetables you like...
 
Take 1 pkg. of turkey drumsticks, 1 cup white wine, one onion peeled and quartered, a bay leaf, and 3-4 whole peppercorns.  Cook on low in the crockpot for 7-8 hrs, when cool enough to handle, debone and set the turkey meat aside.  Strain the broth over a dutch oven or medium sized pot.  Add 1 container of Swanson's organic chicken broth, a few shakes of white pepper, add 3-4 stalks of celery cut in 1/2" pieces, (it's better if you use the tender inner heart pieces) (at this point you can also add whatever vegetables you like), bring to a boil, lower and simmer about 30 minutes.  Add the turkey meat, bring to a boil, and reduce the heat a little, add about 2 cups of wide egg noodles and cook only until the noodles are done, being careful not to overcook them.  It's optional, but if you have it around, add about 2 TBS. of finely chopped fresh parsley.  This won't make gallons, but generous portions for 2-3 people. 
 

Roaster cut in half, broth, a good sturdy noodle, some cornstarch to thicken to a pot pie consistency.
