To be honest Jim, it didn't catch on, so off the menu, sad but new things in a Q joint don't catch on very well! Too traditional a food style! That said, my Pork Belly sandwich is a hit! Speaking of genius -- how goes the sales of the pork BBQ "burger"? My mouth still waters at the thought of adding crispy goodness to my favorite 'cue.

My mouth still waters at the thought of adding crispy goodness to my favorite 'cue. I HAVE GOT TO GET BACK THERE!.........Ctf.........how well will the stuff "travel" back a cple of hours? I can see walking outta there with about a weeks worth of "smiles"

Coming from the North East I know snobs and snobbery and therefore really cannot bring myself to call Texans "snobs". That said, they are indeed "excessively proud" of what they do to make a cheap cut of beef palatable with with smoke, salt & pepper. I'd say that only 10% of the Texas brisket I've had "down here" in the past seven years was truly outstanding; the rest was "O.K." to "Why didn't I have pork?". On the other hand, I can't remember a bad 'brisket-based' meal at a Jewish Deli. Of course, they have had more practice.

jackd418 Lexington N.C. Second that. The most disappointing "drive 100 miles out of my way" was Lexington #1: relatively tasteless chopped shoulder with that tepid, tasteless, watery ketchup "sauce". Yikes! Gimme that Eastern minced whole hog and the hot-spiced vinegar sauce; that's 'CUE!!! (I'm not even from Carolina, but I do KNOW "East rules"! And they aren't snobs; they just serve it up and smile).

The worst BBQ snobs? I would say Hackensack, NJ. I base this on the many positive reviews Cubby's BBQ gets and the crowds that go there for their boiled and grilled ribs. Oh, unless the term "worst" was referring to the snobs rather than the BBQ.... Bart

I guess i cant really answer that, Tom. I have had great barbecue-North Carolina( both east and western) St. Louis( honestly one of my favorites) and even Milwaukee-a place called Speed Queen, started by a woman who makes great barbecue.I have heard a certain place in Maryland has fantastic bbq..will visit someday..

bartl Worst...? I would say Hackensack, NJ. I base this on the many positive reviews Cubby's BBQ gets and the crowds that go there for their boiled and grilled ribs. That's like the Tunnel BBQ in Windsor which has been operating since the fifties and still gets rave reviews from many people. But the three or four times I've tried their ribs over the past 35 years I've been underwhelmed. And now I realize why. They parboil their ribs and marinate them before grilling them over a pit. But they're not properly slow smoked. Since there's been an explosion in the number of smokehouses in southern Ontario in the past decade, there's no reason for me to go back to the Tunnel BBQ for their ribs. The Tunnel has really great desserts though, so for a pie and a coffee it's worth a stop.

SeamusD Syracuse, NY. Trust me. Yeah, but their claim to BBQ fame is turning into a chain and going downhill fast! I get a lot of people in here from Syracuse, since I sit right on Rt. 15, and they are quick to dump on Dinosaur BBQ!

Does sausage count!? Hell yeah it counts. Handmade Texas hot guts sausage like the kind you get at LA Barbecue in South Austin is some of the finest bbq eating you'll ever have the pleasure of devouring. I love brisket but at the end of the day I'd rather have a crafted hot gut link than any of the classic Texas barbecue dishes.

Opinion? Regional......my family is from North Carolina and find it the weakest I have had.Ilike a bit thicker sauce, and found St. Louis style very good..a matter of taste.snobs? The Carolinas and Texas.....However, sausages, from Blacks, were awesome-that, to me was bbq, as I dont know it in Wisconsin..

Well, bbqboy, it was a smoky sauce served on very tender ribs.A lot thicker sauce than NC style, and i liked it.

ann peeples Does sausage count? Had 3 kinds of sausage sent to me from Texas.really good! Glad you enjoyed some smoked sausage from Texas. Most of us think it's the greatest! I'm especially fond of Louie Mueller's regular (not jalapeno) smoked sausage.
