Hash Brown Recipe With Spam

2 Large Baking Potatoes
1 can Spam
3 Egg Whites
Turmeric
Cayenne Pepper
Soy Sauce
Butter 
Vegetable Oil
Salt and pepper
 
 
Bake potatoes in 450 oven with skin on dry until done but still firm approx 40 minutes. Set aside and let come to room temp. This can be done night before. Just make sure potatoes are room temp of cold. 
 
Dice entire can of Spam in 1/2 inch squares and saute in separate non stick skillet with 1 tablespoon soy sauce. 
 
While spam is cooking dice potatoes to 1/2 inch to 3/4 inch size including skin. Put in medium high non stick skillet with 2 tablespoons vegetable oil  and spread out flat. 
 
When potatoes have browned on side one sprinkle 1 1/2 teaspoons turmeric and cayenne pepper to taste and mix in and flatten out.
 
Once spam has browned dump on top of potatoes and mix in. 
 
Cook mixture until crispy on outside but tender.
 
Mix three egg whites in small bowl and add salt, pepper, cayenne to taste, 1/4 tsp turmeric and a splash of water. 
Add small pat of butter to empty Spam skillet and melt. Add egg mixture and cook until done flipping once.
 
Salt potatoes mixture to taste and top with egg.
