 Fla Iron Steak Marinade

I took the wife out for a birthday dinner and what I consider one of the better steak house chains and while she had the prime rib, I ordered the marinated flat iron steak. I was absolutely floored when I tasted it, it was excellent. I was wondering if any of you good folks would part with a recipe for a marinade. I know Randall's has flat iron steaks occasionally and intend to buy some but I am clueless about marinades.

    All I normally use on steaks as a marinade is low sodium Yamasa soy sauce and then I toss some mesquite on the coals to give them a hit of smoke. I did use this one on a flank steak and it was really good. It should translate well to a flat iron. You might also marinate in some chimmichuri. That one works well on meats, even as a steak sauce.

      Thank you very much. That spice mixture sounds very interesting and we do fortunately have a slew of ethnic markets here so I will indeed attempt this.

        Not sure this is even close to what you had, but I make a marinade of
         
        1 cup Marsala wine
        1/4c soy
        2 cloves of garlic
        2 tsp Vinegar
        good "shot" of a Hot sauce ( I like srichiacha)

          We've been getting the flat-iron steaks at our local Kroger's since they were (sometimes) $3.99 a pound. This is the marinade I always used.

          1/2 cup olive oil
          1/4 cup Worcestershire sauce
          2 smashed garlic cloves
          2 tablespoons McCormick's Montreal Brand steak seasoning
          1 tablespoon red wine vinegar
          1/2 teaspoon dried basil
          1/2 teaspoon italian seasoning

            BB, Central Market in Dallas sells a "chimichurri" style marinated flank steak in their meat dept thats absolutely addictive! They also offer a few other marinated flank steaks but the chimichurri flavor is the best! As you're in Austin, I know you're familiar with the store.

                I've tried hundreds of marinades and recipes in my 50+ years of grilling and this one is near the top of the list.
                It's not a real "Heavy" marinade but it has a terrific flavor. Worth ordering. I used the original.

                    Over the weekend I used FCF's marinade on some pork steaks (marination time almost 24 hours) and they turned out well.

                      Hi twin, went to Central Market and got the Chimmichuri, marinated overnight and it was excellent, going to try FriedClamFanatic and FBMe next. Thanks for all the recipes guys,our taste buds sure are appreciative.

                            BB, if you have "Kens" Italian dressing, if not some other premium Italian dressing, add  some Teriyaki, put in a Glad Bag 24 hr marinade, it works well!

                                I do this mostly with flank steak, but I've used it with flat iron, skirt and hanger steaks, too: I smash up a couple of cloves of garlic and rub it onto both sides of the steak. Then I'll rub in some cumin, ancho chili powder and black pepper. I then put the steak into a large Ziplock bag and add olive oil and some wine (sometimes red, sometimes white -- both work well), and seal the bag. I place the bag in the refrigerator for two to four hours (although I've left it in for as long as 24 hours), turning it over a couple of times.

                                  Not sure if I can name a cooking show here?  Can I at least say it's on PBS & originates out of New England?  In any case, they JUST did a recipe for what they called Steakhouse style beef tips & they used flank/flatiron steak.  They went into the science of grilling and said that lemon juice, italian salad dressing, vinegar, beer/other acids aren't so good for the marinade.  What they used IIRC was tomato paste, brown sugar, worcestishire sauce, salt & pepper, paprika, chili pepper (not too sure about that) & olive oil.  I am probably MISSING something in there...but this particular show DOES have a website where they run the recipe videos, soooo-if anyone's interested?

                                    I made a flat iron steak about two weeks ago.  Into a Zip Lock bag I put Worcestershire, Grey Poupon mustard, hot pepper flakes, ancho chile powder, herbes de provence, Mexican oregano and canola oil.  I smooshed all that together and added the steak that I used the Jaccard on.  Grilled it.  Delicious!
