Italian Wedding Soup
This soup is interesting because it's not ever served at weddings! It's a mistranslation of the Italian minestra maritata
which means "married soup" as green vegetables and meat go well together, thus a "good marriage" of flavors. The required "green" is escarole and around here it's hard to find.....or I find it and it looks like death. The other day at the store the escarole was beautiful so I'm going to make Wedding Soup. It's kind of a pain to make.....clean the escarole and chop, make the polpettini,
make the chicken broth, cook the acini di pepe,
etc. But the end result is worth it.
We will be eating it while watching Penn State crush Ohio State!!
