This could be called "leftover soup"! I had 2 pieces (4-5 oz.?) of leftover filet mignon from a previous dinner. I know, who has leftover filet??!!
but I had also made pommes darphin
and we ate all of it.......and left some meat.
1 C dried, soaked, cooked or 2 cans black beans
1/4 large onion, chopped
2 garlic cloves, chopped
1/2 each red, yellow, green pepper, chopped in large pieces
1 cubanelle pepper (because I had one......you could use any pepper), chopped
corn (I didn't have any)
cubed beef (if using raw beef, sear it in a hot sauté pan)
cumin, Tabasco, salt and pepper to taste
chopped cilantro (sorry, Mar)
To the cooked beans add all the ingredients, except cilantro, and simmer 30 mins. Add the cilantro at the end.
